The items that will be launched can be modified by the iPod Launcher preference pane found in the System Preferences. Simply add/remove the items you want and they will be launched the next time an iPod is detected.
You can also select/deselect individual items to indicate whether or not they should be launched. This is useful if you're connecting your iPod multiple times in a day but don't want to keep running the backup script. Instead of removing it from the list simply deselect it from the list and connect your iPod. When you're done you can select it again for the next time you connect your iPod.
The items are launched in the order listed. You can easily modify the launch order by selecting an item and dragging it into the desired position.
Finally, you can select a minimum amount of time between launches. This allows you to configure your Mac to not launch applications every time you connect your iPod. For example, you can connect your iPod in the morning and have it launch your applications and then have iPod Launcher wait 8 hours before doing another set of launches. You can connect your iPod as many times as you want and applications won't launch until those 8 hours have passed.
